This piquant single-varietal olive oil packs a piercing and surprising punch in its 100ml bottle! At first sight, the bottle evokes wonder with its beautifully crafted "art deco" design. Let it be hit by light, and it shows the delicious oil in all its glory.
The oil inside this impacting bottle is made solely by cold-pressing the bitter picholine olive. This makes this a fine and sharply bitter oil! It comes in a small 100ml bottle smartly supplied with a sprayer, so you can savour and enjoy this very special evoo slowly and delicately.
At first taste the warm bitterness of the oil hits you and surprises you. Then its intense early vegetables taste appears strongly in the palate. It brings out strong notes of root vegetables, artichoke and freshness of green apple peel.

The olives are picked in early November, cold-pressed and filtered. The oil is then stored in stainless steel, nitrogen-flushed temperature-controlled tanks.
Growing between the vineyards and the aromatic scrubland, the olive groves at Château d’Estoublon cover more than 48 hectares within the Valley des Baux appellation, the Appellation d’Origine Contrôlée Vallée des Baux de Provence. Estoublon is one of the rare estates in this Alpilles region which chose to replant its olive trees after the devastating frost in 1956.
There are four varieties of olives – Grossane, Salonenque, Béruguette, and Picholine which make up the blends and stand behind the typicity of the olive oils made at the Château d’Estoublon.
